The delicious combination of fluffy pasta with nutty butter earthy rosemary is a year-round hit that’s quick to bring together.
Ingredients
- 16 oz gnocchi
- 2 C broccoli, cut into small spears or florets
- 15 oz cannellini beans, rinsed and thoroughly dried
- 6 T unsalted butter, keeping 2 T cold until ready
- 3 rosemary sprigs
- 2 garlic cloves, peeled and smashed flat, but left whole
- 1 C boiling water + ½ t salt
- ½ C Parmigiano-Reggiano, finely grated
- 1T lemon juice
- flakey sea salt
- freshly cracked black pepper
Instructions
- 1 Heat A Large, Heavy Skillet Over: Heat a large, heavy skillet over medium-high heat. Melt 1 tablespoon of butter. Add the broccoli, and let it char on the edges, about 2-3 minutes. Remove and set aside.
- 2 In The Same Hot Pan, Add: In the same hot pan, add another 2 tablespoons of butter until melted. Add the raw gnocchi and the dried beans in a single layer. Let them sear undisturbed for 3–4 minutes until deeply golden and crisp on one side. Toss gently and cook for 2 more minutes. Remove the gnocchi and beans from the pan and set them aside.
- 3 Lower The Heat To Just Below: Lower the heat to just below medium. Add 1 tablespoon of butter to the pan along with the rosemary sprigs and garlic cloves. When the butter is a rich amber, immediately remove the rosemary and garlic. Reserve the garlic for serving, if desired.
- 4 Carefully Pour ½ Cup The Salted: Carefully pour ½ cup the salted boiling water directly into the brown butter - the sputtering is normal. Whisk vigorously for 30 seconds until the water and butter are emulsified and glossy. Whisk in a few teaspoons of water as needed until the sauce is smooth and even.
- 5 Return The Gnocchi, Beans, And Broccoli: Return the gnocchi, beans, and broccoli to the pan. Toss them continuously in the bubbling liquid until the liquid reduces by half, about a minute.
- 6 Remove From Heat And Immediately Add: Remove from heat and immediately add the remaining 2 tablespoons of ice-cold butter and cheese. Stir and toss the pan rapidly and continuously. Once the sauce has fully coated everything, plate it.
- 7 Finish Each Dish With A Drizzle: Finish each dish with a drizzle of fresh lemon juice, freshly cracked black pepper, and a sprinkle of flaky sea salt. Your garlic-loving guests can fight over the garlic cloves!
