Pro Tips & Delicious Variations
- If you make a dish and have leftover rigatoni, this is a great way to use it up. Even if you have less than ½ lb leftover, make as directed - it will present as a very healthy and delicious warm pasta salad.
- Don’t have a deep skillet? Use a large skillet to make the chickpeas, broccoli and sauce, return the cooked rigatoni to the cooking pot, and then add the sauce mixture to the rigatoni. Continue as directed.
- You can serve the red pepper flakes on the side if not everyone likes a little bite to their dish.
- When serving as a small side dish, feel free to use up to ¾ C of EVOO. As a main dish, it’s best to control the oil while making the sauce so it doesn’t present as oily and heavy.
- For fancier presentation, use a fine grater for ½ the Parmigiano-Reggiano, and a more coarse grater for the other ½. The fine should be added before plating, then the more coarse used for the garnish. Sprinkle with very coarsely chopped flat-leaf Italian parsley, about ¼ C.
