- 1 Yellow onion (diced)
- 2 tbsp Fresh ginger (grated or finely minced)
- 3 cloves Garlic (minced)
- 1.5 tbsp Mild curry powder
- ½ tsp Turmeric
- Salt & Black Pepper (to taste)
- The Creamy Finish
- 1 can (14oz) Light coconut milk OR ¾ cup Plain Greek Yogurt (for extra protein)
- Optional: Squeeze of lime or 1 tsp Apple cider vinegar
Instructions
- 1 Sauté: Sauté: Heat 1 tbsp of oil in a large pot over medium heat. Add the onion and cook for 5 minutes until soft.
- 2 Spice: Spice: Add the ginger, garlic, curry powder, and turmeric. Stir constantly for 60 seconds to "bloom" the spices and release the oils.
- 3 Simmer: Simmer: Add the cubed sweet potatoes, rinsed red lentils, and vegetable broth. Bring to a boil, then turn the heat down to low. Cover and simmer for 15–20 minutes until the potatoes are fork-tender and lentils have softened.
- 4 Blend: Blend: Use an immersion blender directly in the pot to puree the soup until silky smooth. (If using a countertop blender, blend in small batches and be careful of the steam).
- 5 Finish: Finish: Stir in the whole white beans and simmer for 2-3 minutes.
- 6 Gently Stir In Your Choice Of: Gently stir in your choice of coconut milk or Greek yogurt. If using yogurt, first temper it by whisking it with a ladle of slightly cooled soup, then stir into the hot soup.
- 7 Season: Season: Taste and add salt, pepper, and a squeeze of lime to brighten the flavors.
