BBQ Pulled Jackfruit
This low calorie fruit tastes like hearts of palm, has the texture of pulled pork, and easily takes on any flavors you throw at it.
Ingredients
- 3 cans Jackfruit in Brine (15 oz each, not in syrup!)
- 1 t Extra Virgin Olive Oil
- 1 Small Sweet Onion, chopped
- 3 Garlic Cloves, minced
- 2 t Brown Sugar
- 1 t Cumin Seeds, freshly ground
- ¼ t Cayenne Pepper, or to taste
- 1½ t Chili Powder
- 1 t Paprika (sweet)
- 1½ t Liquid Smoke
- 1 C Vegetable Broth
- ½ C BBQ Sauce, divided (your favorite brand, or from scratch)
- 2 Soft burger buns or 4-6 slider buns
Instructions
- 1 Drain And Rinse The Jackfruit: Drain and rinse the jackfruit. Cut off the diamond-shaped core off and dice, leaving the fibrous part intact. Heat the oil in a saucepan. Saute the onion until softened, then add the garlic and sauté for about a minute, until the rawness is cooked away.
- 2 Add The Brown Sugar Through The: Add the brown sugar through the vegetable broth, gently stir in the jackfruit, and then simmer, covered, for 15 minutes, gently stirring occasionally. Remove the lid and cook until most of the liquid is gone. Gently stir in ¼ C of BBQ sauce, and then place on a cookie sheet. Using two forks, pull each piece into shreds while evenly spreading it out so it isn’t overlapping.
- 3 Bake At 400 Degrees Until It: Bake at 400 degrees until it begins to brown and crisp at the edges, about 20-30 minutes. Toss with the remaining BBQ sauce.
- 4 Turn Off The Oven And Place: Turn off the oven and place the buns in for 1 minute, or until warm and soft. Put half of the jackfruit on each bun and serve.
Pro Tips & Delicious Variations
- Be sure to buy jackfruit in brine, not syrup.
- Sweet onions, like vidalia, offer a softer flavor - for more bite use a white onion.
- I like Sweet Baby Ray’s Original BBQ sauce, but use your favorite or make your own!
- If you don’t have liquid smoke, substitute the teaspoon of paprika with smoked paprika.
- Serve with a side of slaw in a small ramekin so your guests can top their sandwich with it, or to have it as a crunchy side.
